The chef had prepared a "Watermelon Tartare," a play on traditional steak tartare, for the guests at Winesong! What is usually raw steak was instead raw heirloom tomatoes and watermelon, pickled watermelon rind, and basil with a pineapple "yolk" - encapsulated pineapple juice.
